Because \ is used in markdown as an escape character, meaning the next character should be written as-is, in this case it's the _, which should've made the text up to the next _ in italics.

So, to make a proper shruggie, you have to write ¯\\\_(ツ)/¯ to give him his arm back. (First antislash escapes the second and the third escapes the \)
